This goes perfectly with the Mushroom scallops recipe. So easy and simple to do but its so so tasty and you can fancy it up on the plate too

Ingredients:
• 1 cup frozen peas
• ¼ cup fresh mint leaves or 2 tsp mint sauce
• 2 tbs butter
• 2 garlic cloves
• 1 tbs truffle oil
• ½ tsp salt and pepper

Pea Puree

1. Before starting this I suggest prepping the mushrooms first
2. Add the peas to a pan with water and bring to a boil then reduce and simmer till soft (about 5 mins)
3. Remove from water, drain and add to a blender
4. Add the mint, 1 tbs butter, garlic, salt & pepper and blend. I prefer mine completely smooth but you can leave chunks if you prefer
5. Once smooth, add to a pan with 1 tbs butter and leave on a low heat until you are ready to serve – add the truffle oil just before serving
