Grilled Buffalo Chicken Sandwich

After all the BBQ from the holiday, we figured a good buffalo chicken sandwich would be just what you need for the weekend!

For this recipe we used boneless skinless chicken thighs. You could use chicken breast if you would like, just make sure they aren't too thick to use for a sandwich.

We started by trimming the thighs. With boneless/skinless thighs, you may find several bad butcher cuts, bone fragment, or unwanted fat. You will want to removed anything that is hanging off or just isn't appetizing.

Once the thighs are trimmed, we used a rolling pin wrapped in plastic to beat the thighs flat. This helps tenderize the meat as well as getting a uniform thickness all the way across the thigh. You can use a meat mallet or anything that will help you get an even thickness across the thigh.

Now its time to get the thighs in the marinade. For todays recipe we are using a unique flavor profile that is going to compliment the finished product really well. We used a large mixing bowl to mix the marinade up and soak the thighs.

Marinade Recipe
*20oz of Pepsi
*1 cup of Killer Hogs Hot Sauce
*1 Lemon (Sliced)
*1 Lime (Sliced)

Once you get the marinade mixed up you can add the chicken thighs. We let the chicken soak for about 2 hours but you can go longer with no issues. I have used this recipe before and allowed the chicken to soak over night and it was awesome!!

While the chicken is in the marinade we are going to get the slaw mixed up. We started with the following ingredients to make the dressing for the slaw.

Slaw Dressing Ingredients
*1 cup Mayo
*1/2 cup Milk
*1 packet of Hidden Valley Ranch Mix

You want to mix these ingredients well. Once they are mixed you will need to incorporate the dressing in you slaw mix. We just used a bag slaw mix. For our mix we used 3/4 of the dressing to one bag of slaw. You may need to use more or less depending on your slaw mix and how wet you like your slaw.

Once slaw is mixed up good, we added 1/2 cup of goat cheese. This adds a saltiness to the slaw as well as a creamy texture. You could use blue cheese as well if you would like. Of course add salt and pepper to your liking.

Now lets get the Weber Kettle fired up. We used a full chimney of Royal Oak Lump Charcoal. Once to coals are ashed over and white on top we dumped the in the kettle. We set up the grill for 2 zone cooking. Today we cooked on the factory Weber grate to help get a good crust on the chicken.

Now it's time to get this chicken cooking! We place the thighs right over the coals. We kept a close eye on them and flipped them when needed.

For the sauce......
*1/2 stick of butter
*1 Cup of Killer Hogs Hot Sauce

Get the butter melted and sauce mixed in. You can do this ahead of time but make sure the sauce is not cold when going on the chicken. You at least want the sauce warmed to keep from stalling the chicken during the cooking process.

Once the thighs have a good color and crust we get them moved to the indirect side. Now is a good time to temp the thighs. Once they are 165-170 we can start applying the sauce. You want your finish temp to be around 185-190.

While the finish temp is coming up, you can add the Texas Toast to the grill to get it toasted. We used foil to keep from burning the toast and to get even color on the toast.

LETS BUILD THE PERFECT BUFFALO CHICKEN SANDWICH!!!!

To assemble this sandwich we place two thighs on the toast, topped with the Goat Cheese Slaw, and a little extra sauce. You can easily make this recipe your own and incorporate the flavors you prefer.

This sandwich takes the cake when it come to flavor!

Tried this last night, that was the best grilled chicken I've ever had. Now I know to start a little earlier, the indirect portion took a little longer than I realized but 100% worth it.

I did this with buttered breaded chicken tenders, Red Hot Buffalo Sauce & Louisiana Hot Sauce in a pot with butter, Vinegar, Salt, Pepper, drenched my shredded up chicken, toasted my bread, slapped a bit of ranch on it and it was so good! Thanks for the idea!

Made this recipe on Saturday night. It’s a keeper for sure. I really like the goat cheese in the slaw. I find on traditional buffalo chicken the blue cheese can be a bit overpowering some times. Making this again tonight at the request of my girlfriend who also liked it.
