Gratz on the kayak! Nice setup and video. If didnt know already, the standard wheel set for the barcart has slots to loop the tie down thru and will elimnate the rubbing issue and probably your slack line issue. I have both sets of wheels and the sandwheels really don't spin as well as the regular wheels. Keep up the good content!

As you get to "Know" your kayak better, I'm sure you'll come up with more "Solutions to Problems" you''ll encounter. I have the same 'Yak, and have upgraded several little "Items", myself. About the rudder steering: If you get ALL the slack out of the system, it'll just come back when the hull gets warm and then cools off (the hull, being Poly, will expand a LOT when it gets hot...!). It happens to all my Titan 'Yaks, and is nothing to "worry" about (just the "Nature of the Beast", called thermal-dynamics!).
Your 12.5 will go pretty good with the Newport NK180 and especially with the NK180 Pro, but will really "Gitty-Up-GO" with the NK300 (Mine goes WELL over 6 mph, even with the 55 amp battery installed, and has All-Day Range...!).
You might want to put Anchor Trolleys on both sides too, so you can use an anchor or even a Sea-Anchor (to slow down your drifting in really windy weather).
(If I knew how to make a video and put it on YouTube, I'd be able to show people how I set my 'Yaks up...! People take pictures and ask questions about all my 'Yaks, whenever I go fishing. I tell'em so they can do theirs!).
