Feta cream makes an interesting alternative to hummus; tastes great with baked pita bread, or can also be used to fill small peppers, cherry tomatoes, etc.

Preparation time: 15 minutes.
Difficulty: Easy
Calories per serving: Unspecified

Ingredients for 1 person:
200g of feta cheese (sheep or cow)
200 g of cream cheese
1 garlic clove
2 tablespoons of fresh and flat-leaf parsley
½ sprig of rosemary
2 tablespoons of olive oil
½ red pepper (or 1/2 teaspoon of tomato paste)
Salt and pepper,
Milk or water if the dish needs it

Toss all the ingredients into a tall container and beat with a hand mixer until all ingredients are thoroughly mixed together. Season with salt and pepper. Add milk or water if necessary so that the mixture is easy to spread afterwards.

And now for some tips and additional comments:
Pluck the herbs but do not chop - otherwise the mixture would be just too thin.

I prefer using paprika to colour the cream. Using tomato purée changes the taste a little. Needless to say you should avoid both if you want to make a light cream.

Nevertheless, I think adding paprika gives the dish a kick.
If you fancy spicy food, you can add fresh or dried chillies.
