Rogue Amoeba is awesome, they have a program called Loopback and you can create a device for every application, then open Audio MIDI Setup and make an aggregate device which has all of those channels. In your DAW (I use ableton live), you can make a lot of tracks that each pull from a different channel, so you have an entire audio workstation to edit live streams. Rogue Amoeba also makes Audio Hijack which is cool for sampling high quality stuff, and they also have a program AirFoil which allows you to forward a virtual device stream to Airplay devices
