If you have a jar of pickles that you’ve eaten and are left with brine in the jar, I have a perfect solution for you! Make a vinaigrette, perfect for salads or anything else you want!

- 1/3 brine (or vinegar)
- 2/3 olive oil
- 1 tablespoon chopped shallot
- 1 clove garlic, minced
- 2 tsp Dijon mustard
- 1-2 tsp honey (optional)
- 1/2 tsp kosher salt
- 1/2 tsp black pepper

I always have SO MANY jars without the pickles/peppers but can't throw out the brine until I need room. Good idea.

Add some chopped tomato, dill pickles and a chopped up hard boiled egg and you have a delicious topping to scoop avocado out with!

I especially like to do this with the brine from a jar of pickled artichoke hearts. So tasty, add sour cream & you have a vegetable dip.

Wow, just last night, I was trying to figure out what to do with the juice from the pickles. I was not about to throw it out since it was so delicious. I put it back in the refrigerator and told myself to look up on YouTube what to do with all that delicious juice (from a very large jar).
