My late father made this for my 8th birthday, and none of my friends liked it, but I ate the whole plate! He wasn't italian, but he knew good food. Makes me smile to remember him. I need to make this again soon. ❤

It was a religious experience for me to have this *in* Parma.

Tuscan Melon with 40-month-old prosciutto…

I also generally am not a fan for “cantaloupe” but I had no idea how high the bar could be raised…

Tuscan melons blew…my…mind…

After that we went to Modena and tried 100-year-old balsamic vinegar.

Italy was amazing.
