The Anchor Hitch is also known as the Anchor Bend, Fisherman's Hitch, and Fisherman's Bend. It is tied very similarly to the Round Turn with Two Half-Hitches. Though this knot is just a bit stronger because the first half hitch is seized by the turn.

Excellent, clear instruction. Arborists use this as a termination hitch onto their harness - they trust their life on it. Some would add a stopper knot in place of the final half hitch.

Great demo & explanation of the knot's working. Question: @0:48 Would it matter to the knot's integrity if you took the 2nd half-hitch UNDER the standing line rather than OVER, so that the loose end finishes pointing down through the 2nd half-hitch insteaf of up. Doing so seems to end up with slightly better dressed knot.

The Anchor Hitch (Anchor Bend) is a great knot, but other well-established knots are well-established for a reason. The Roundturn and Two Half Hitches (RT2HH) is much better while tying/untying under load. For example, you can tie the RT2HH while the load is present, like a 100 lbs weight suspended from a tree limb, and untying the knot holding that suspended weight is easy. Also, a RT2HH allows tension to be added to the line by completing the round turn, and it never jams. I actually currently cannot think of another knot that has all these capabilities in one knot.

In contrast, the Anchor Hitch is impossible to tie or untie under a heavy load, does not allow tension to be added, and always has slack before applying the load. However, it is highly secure and gets more secure with more load.
