Also you can add lemon juice to the red cabbage juice to make a bright violet pink.

Also I made the blue using baking soda then accidentally overcooked/burnt it (while trying to reduce it) and it went a really bright almost synthetic looking green. A happy accident because it was helpful to make the green I was trying to make

I just tried this and it worked great, thanks!! 👍🏼 Now I can make a natural blue and purple cake for my son for his birthday!
I boiled the cabbage for 10 minutes, boiled the leftover water for 20 minutes to reduce, and that worked! I added a little less than 1/2 tsp of baking soda to make dark almost navy blue.
