Carne en su jugo, or meat cooked in its juice, is a special dish from Jalisco, Mexico that my husband absolutely loves! 🥰 He's been asking me to make it again, so today I'm going to show you how to make this delicious recipe that will become a family favorite 😋 If you enjoy this recipe please don’t forget to give me a big thumbs up and if you are not subscribed, please subscribe to become part of our family 💕

CARNE EN SU JUGO INGREDIENTS:
For the meat
► 1 lb bacon
► 7 chiles gueros (yellow peppers)
► 5 green onions
► 2 1/2 lbs carne ranchera
► Blend seasoning (black pepper, salt and garlic)
► Some chicken bouillon
For the salsa
► 1 1/2 lbs tomatillo
► 5 chiles serrano
► 2 cups of water from where we boiled tomatillos
► Small bunch of cilantro
► 1/4 small white onion
► 3 garlic cloves
► 1 tbsp chicken bouillon
To serve
► Some frijoles de la olla
► Some cilantro
► Some white onion
► Radish

It blows my mind how similarly different cultures cook. In most west African dishes, we do the same: we season and “steam” the meat to render its juices, then add our blended peppers or tomatoes, then add to the meat pot. This feels familiar and I love it! I’ll definitely be trying this.

Another recipe to add to my ketoish list! Not full keto but going to cut on my usual carbs (lots of tortillas and bread) and have carbs in moderation so small portion of beans will work.
