Bobby Flay dropped everything to spend six weeks in Rome and fell in love with the lifestyle, the culture and, most of all, the food. Wanting a local guide to really help him understand Italy, Bobby called Giada De Laurentiis. Having grown up in Italy, Rome is in her blood, and together they embark on the trip of a lifetime. I absolutely love Giada, sorry, Bobby notta so much. He is no Stanley Tucci. Who thought to assign bobbie to this duo? I will be preparing this recipe, it looks exquisite ! For those who haven't tried imported mortadella- please only get ridiculously thin sliced mortadella. Mortadella, meaning “mortar ground sausage, ” specifically refers to a finely ground pork sausage that’s flavored, it is a rich and buttery meat. It is not bologna, though it is from, you guessed it; Bologna. It is made with red wine, myrtle berries. A traditional high-quality mortadella contains around 35% pork trimmings (shoulder) (90% CL grade), pork trimmings (85% CL grade), 15% pork belly, 10% tripe and 20% visible cubes (around 1 cm × 1 cm) of pork neck fat. If no tripe is available, then 35% belly meat is used.
