My family’s favourite pasta! I cook it every weekend! With a few simple ingredients and in no time you can make this incredibly delicious and filling vegan pasta dish. ASMR cooking. 🥣Ingredients:
1 avocado
80g | 2 cups fresh spinach
1/2 bunch basil
1 garlic clove
1/2 cup soaked cashews
6tbsp | 90ml olive oil
1 cup | 250ml dairy free milk of your choice
Juice of 1 lemon
1/2tsp salt
1/4tsp black pepper
1/2 cup sun-dried tomatoes
400g | 14oz pasta of your choice
plant based parmesan or nutritional yeast (optional)
🧑🍳Cooking tip:
❗Instead of fresh basil for grassy flavour you can use fresh parsley, cilantro, mint, sage or tarragon.
❗if you have time, soak cashews in water overnight. For the quick version
boil them for 10 minutes.
❗cook your pasta according to the package instructions and your preferred level (I like it al dente)
🥣Method:
Bring a large pot of salted water to a boil.
Peel 1 avocado.
Transfer avocado to a food processor.
Add 80g | 2 cups fresh spinach and 1/2 bunch fresh basil.
Instead of fresh basil for grassy flavour you can use fresh parsley, cilantro, mint, sage or tarragon.
1 garlic clove.
1/2 cup soaked overnight cashews. You can boil cashews for 10 minutes instead of soaking overnight to save time.
Pour 6tbsp | 90ml olive oil.
1 cup | 250ml dairy free milk of your choice.
Squeeze the juice of 1 lemon.
Add 1/2tsp salt and 1/4tsp black pepper.
Blitz until smooth.
Chop 1/2 cup sun-dried tomatoes.
Cook 400g | 14oz pasta according to the package instructions and your preferred level. I like it al dente.
Once pasta is cooked, drain and return to a pot or large dish.
Pour amazing and nutritional, full of flavour green sauce over.
Add chopped sun-dried tomatoes.
Stir well.
Serve pasta into bowls and top with vegan parmesan or nutritional yeast (toping is optional).
