I know this is a dumb question, but isn't that timber going to suck up the moisture and rot?

What happens in a greenhouse? Condensation. That is wood. It will rot. Furthermore, the plastic panels you chose scatter light and have a lot of total internal refraction. Meaning only like 40-60% of the light will make it through onto the leaves. Glad you’re happy, and hope you enjoy its use, but you were better off making tunnels from rebar. Just sink some pipes into the ground and bend the rebar around to slot in the pipes. Then run plastic sheet along the tunnel.
