The check update error is because you pasted the same repository at 5:29. You don't need to paste it, it is already all there.

Thank you for doing this, this was an encouragement.
FYI, in my case, it asked: "A new version of configuration file" in the GRUB and If I wanted to keep default or new version, I selected New.
It didnt ask me to restart when possible after the update, it only drop me to back to the console, but no errors were noticed, so I manually restarted `reboot` then All Good!

At 3:56 you missed the /etc/apt from the file path, which is why you got the weird nothing is there.

just upgraded and went pain free, all the VMs started up and have access to the network .
my system is just running home assistant, pfsense, emby, etc, so no complex ceph or clusters etc .

developers give good advice on how to update correctly:
"Perform the actions via console or ssh; preferably via console to avoid interrupted ssh connections. Do not carry out the upgrade when connected via the virtual console offered by the GUI; as this will get interrupted during the upgrade."

One more thing while trying to upgrade 7 to 8...I run the pve7to8 command and the pve7to8 --full command but only get command not found 😞

EDIT: I had to FIRST run apt upgrade. I did the apt update but meh...anyways sorry...gonna see how this goes forward and will toss up edits here to help others. 🙂
