A little tidbit I learned from Italians: use the cheaper, regular olive oil for things cooked hot like that. Extra virgin is usually used for dressings and things that either aren’t cooked or aren’t heated too high. It retains all the good fats and nutrients as well the flavor. Regular olive oil stands up to heat better without it changing the properties too much or becoming off-tasting.

I know it’s a lot of work but trust me on this one peel your garlic. Just try it one time already peeled garlic loses a lot of its flavor still good, but not as good as the fresh stuff

Pour the oil into a dispenser and it can be used for other dishes and yes it tastes very good.
