Lol. For those of you who have never had salt-baked foods, much of the salt doesn't actually make it into the food. In this case, salt can't really penetrate the crab shell. And these particular crabs have particularly thick shells. Salt is used in some kinds of cooking because not only is it a great conductor of heat, but it also helps to maintain the flavour of the ingredients, as opposed to cooking it in oil which would make it greasy, or boiling it water which would dilute the flavours. Also, the salt draws out some of the moisture from the crabs, making it less messy to eat. Of course, some of the salt would stay on the shells, but from what I know, people don't eat the shells.

In 2019, when my wife was pregnant my son, my wife and I had traveled to Kota Kinabalu, Malaysia. I went to mangroves and saw fireflies and ate delicious food at the market. I also took pictures on the sunset beach that I will never forget. weather was so hot, but the locals were very kind and smiled. maybe because of good memory, my son is growing up to be a very nice, smiling child.

This is similar to cooking with sand. The heat is not direct to the crab, so it will cook nicely.

FYI you can't do this with regular cooking salt. You need to use hard grainy seasalt or else it will melt due to crab water. Baking shrimp in salt makes it taste 10x times better.

I like that the vendor cracks the claws and legs for you. Very handy for those who didn't grow up on seafood and are a bit clumsy at breaking shells.

아 왕소금새우구이 생각나네 우리나라에도 비슷하게 있어요 길거리 음식으론 없지만.. 정말 맛잇죠 새우구이 저만큼 많은 소금이 핗요하진 않지만 새우를 다 덮을정도로 소금이 들어가긴해요 적당히 짭쪼롬하고 맛잇죠

As a Filipino, I understand Malaysian cooking it is good.
Cooking with salt is good idea which foreigners don't understand salt is for taste not for eating 😂
That is why SEA have the most superior survival rate in the world
