Parma ham production has strict geographical boundaries and there are only 145 certified producers of Parma Ham in the world. All producers must be located in the hills around the city of Parma. We went to a factory in Langhirano to see how it’s made.

Because of this video, I've just remembered that the Roman Soldiers were paid with salt and cured meats. The modern term SALARY came from the Italian word, SALARIUM which meant salt. Thank you for this amazing video! I would never have thought about that had I not seen this. God bless!

Did anyone else notice that geographical restrictions for Parma ham doesn’t include Parma.

That means that if a ham is made in Parma it can’t be called Parma ham.

I got mixed up. The term SALARIUM is Latin and that language was spoken in ancient Rome.

Good to see ham cured with just sea salt and not sodium nitrate and sodium nitrite. The only disadvantage is it takes a long time to be cured.
