A hefeweizen is a German wheat beer, characterized by it's pale yellow color, cloudy appearance, and a banana/clove/bubblegum flavor. I made a 5 gallon batch, using 6 pounds of wheat malt, and 4 pounds of 2-row, mashed for 60 minutes at 152 F. One ounce of Hallertau added at the start of a 60 minute boil. Pitched a 1 liter starter of Wyeast 3068 (Weihenstephan Weizen) and fermented for two weeks at 70 F to 5.5% ABV, then kegged.
