I need to know if the 70d can do this. Basically I want to use exposure compensation and leave it like a full stop above 0 to make the skin smoother and that sort of thing (youtube video). But I wanna be able to control the Shutter speed to meet the 180degree rule, and specially the apertur, for depth of field. If I go all manual ISO wont change if a could covers the sun momentarily, and the exposure in my video will be affected.

What if I don't want to take pictures via the viewfinder? I want to see what i'm taking on the LCD screen. Where can I change that? 

I know responding to this video is 8 or 9 years old, but I want to say it anyway. At 1:37 you stated "we also have the auto mode or as I call it idiot mode so basically the camera takes care of everything when you are in auto mode." I hope you realize that calling beginners, that use that dial mode position, "idiots" you are insulting a large group of people that may have been looking up to you as a pretty good instructor. If you really want to be a good instructor never insult your students, never!
