I gave up kraft American cheese years ago. I ate it as a child because that’s what my mother bought but I don’t like the taste of it. It never taste like real cheese to me.

You need emulsifiers, to do it like Kraft.
Kraft singles are made to have a longer shelf life than regular unadulterated cheese. And I would also bet they have less humidity than a regular cheddar.

Yea, I went to europe recently and tasted the cheese. Then I noticed how real it tasted and realized there was something wrong with american cheese because it tasted like plastic compared to the european cheese

I thought American cheese meant crap cheese, so why make it instead of using good real cheese like Colby, cheddar, brick or Swiss?
