Kimchi, Avocado & Egg on Sourdough Bread

This dish is THE BOMB! It's my new favorite brunch dish, hands-down...and not just because it's a great way to incorporate the loads of kimchi I have in my fridge! This is the recipe that will convert all you kimchi skeptics out there.

Please welcome the wonderful Jordan Bourke as the special guest in this week's video! He's a chef and cookbook author based in London, but he's Irish -- AND because his wife is Korean, he has spent a lot of time in South Korea, including working in the kitchen of restaurants in Korea! (The two of them even wrote a cookbook together called "Our Korean Kitchen"!) Suffice to say, he knows his kimchi and he knows how to make delicious food.

In this video, he shows me how to make his dish Fried Kimchi, Avocado and Egg on Sourdough Bread. He also inspired me to try making a grilled cheese with kimchi (which blew my mind it was so awesome. The acidity of the kimchi is exactly what a grilled cheese needs to reach epic levels of deliciousness).

Kills all the magical fermented powers it supposedly has . Doing it anyway though - thanks nice idea!

It's funny this idea reminds of an old habit I have. I do away with fermenting and directly saute cabbage, onions, and peas and then add to sandwiches, salads, and soups. More than fermentation, the caramalization that Katie referred to, in my opinion, is more important to the taste. In any case, I'd like to see the bread fermentation video for quirky ideas.

I love kimchi anyway... but I have to try this now! What did he drizzle on top at the very end? More olive oil? As for bread... sour dough bread maker here! I’d love to see what you are doing over there!! 🥖 🍞. Keeping it Quirky!
