Malaysia Laksa recipe! This epic spicy coconut noodles soup is revered all over the world - with good reason!

This is an easy one made by sprucing up store bought curry paste - you can't just dump paste into coconut milk!

I have made this recipe about a dozen times now. It’s is literally my favourite dish and it’s always a hit with others that I cook it for. Yummy!

I made this yesterday, and it rocked. I got lazy and just used chicken thighs and then cut them up once they were done. The nice thing about this is you could make it ahead of time. Just have the broth ready to heat up, and the rest of it can be assembled basically from the fridge if the broth is hot.
Also, easy to DIY the crispy shallots - just thinly slice and then gently loosen the sliced layers. Put in a small pot of oil, and then cook on medium heat (if the oil is too hot, they'll burn before they're all browned), swirling frequently. Put them on a piece of paper towel on a plate to dry. Save the now seasoned oil.
I saw another recipe that used shrimp instead of chicken, which could be good. Maybe in addition to chicken.

the 'chili' or 'chili sauce from jar' in this recipe is probably sambal oelek, if anyone else is wondering (as I was).

NAGI - you are literally a cooking this looks like one of the best Laksa recipes, I am going to make this week. I have made my own paste from scratch, but also used other branded pastes like Volcom etc - gonna try this new brand. Not sure how long you have lived in Sydney ( I think you do ) - but in the mid-90's there was this Malaysian Laksa restaurant on George St in the CBD opposite Hoyts and Greater Union Cinemas - near the Timezone, and a Heavy Metal Record store on the left side near McDonalds - and the Laksa was unbelievable - then it suddenly closed down. The only other places i have ever found was some little place in the basement eatery section of the Queen Victoria Building, and a place in Willoughby, in Northern Sydney called " Thai Noodle Express". Searching for the "perfect" Laksa paradise is like a lifelong I found THE ABSOLUTE BEST Indian Makhani butter chicken ( opposite the Thai Noodle Express) - it is called Indian Gourmet Curry Express - my friends and I got Butter Chicken from there at least every 2 weeks, and it was run by some middle aged Indonesian dudes - I asked them once " why is you Butter Chicken so good?" - and the Chef replied with a straight face " because it is cooked with love"....so we named the place " Double and this was back in 1996, and the place is still there on Penthurst St. I have eaten Butter chicken form maybe 50 places around the western world and this is by far the Anyway sorry for th hijack, but I just LOVE Laksa, and will make yours on Wednesday, and send you some But I will use chicken thigh instead of Keep up the great work Nagi!!!

This was excellent and the whole family approved.

A bit on the spicy side for me - 1 birdseye chilli instead of 2 would be perfect. I used 1.5L of chicken stock and the full pack of laksa paste as I was feeding 5, and instead of chicken I served it with fresh baby spinach.
