How to make whoopie pies with a creamy marshmallow fluff filling.
If you don't have marshmallow fluff where you live, just use a plain buttercream filling.
I saw these whoopie pies on the cover of a Woman's day magazine and modified a whoopie pie recipe I found online to a small recipe size.
Watermelon whoopie pie video:
Whoopie pies:
1/2 cup sugar (108g)
1/3 cup butter (83g) (if you use salted butter omit the salt in the recipe)
1 tsp baking powder (5ml)
1/2 tsp salt (2.5ml) (I omitted this in the recipe because I used salted butter)
1/2 tablespoon vanilla extract (7.5ml)
1 large egg
1 1/2 cups all purpose flour (203g)
1/3 cup milk (90ml)
blue and red food colour
In a large bowl, blend the sugar and the butter until light and fluffy, add the baking powder, egg and vanilla and blend until combined.
Add the milk and flour a little at a time until you get a nice smooth batter.
Divide the batter into two portions and tint one blue and the other red.
Place the batter into a greased whoopie pie pan or on a greased cookie sheet.
Spread the batter out into the desired shape and smooth the tops well.
Bake at 350 F (177 C) for about 6-7 minutes until a toothpick inserted in the center comes out clean. Try not to overbake and check at the 5 minute mark and check often after that.
Allow to cool completely before filling.
Filling:
6 tbsp butter softened (78g)
1 1/2 cup powdered sugar (171g)
pinch of salt (omit if using salted butter)
1 jar marshmallow fluff (7oz or 213g)
1 tsp vanilla extract (5ml)
(this makes enough filling for 15 whoopie pies approx. You may want to half the recipe for the 6 whoopie pies in this video, unless you like a lot of filling).
Blend the butter and sugar together until combine and then add the vanilla extract and marshmallow fluff. Blend until creamy and light.
