Speaking from experience in supporting complex electrical & electronic systems, without magical self-fixing LRU's or magical matter replicators & enough provisioning of Spares/Repair facilities for tens of thousands of years of resources IST is Sci-Fi fantasy; unless you tow another Earth along with the space ship(s)! Watch Passengers, one rare film to tackle this subject.
Where are you going to anyway, you'd need to find an Earth replica with exact atmosphere we can use, similar gravity (Moon, & Mars for science yes maybe, but not to live on 'permanently'), plate tectonics, resources we have here....etc etc (We clever mammals are Earth we don't just live on it).

If earth 🌍 is going to become interstellar we need to be able to build full size starships in space as people keep thing about how much energy it takes to lift off from the ground build in space not a problem anymore lol
