We do something very similar with the addition of miso and rice wine vinegar, plus mushrooms, cruciferous veggies and leeks. So, if anyone wants to add veggies to this recipe, you'd be in safe hands with those pairings I think.

Silly question, but why would it matter if you're just doing YouTube to sell your cookbook? If you're putting out quality content and your purpose isn't to hurt anyone, it's none of our business what your motivation is!

Very true comparison when you think about the amount of fat in a good quality bechamel cheese sauce; if you don't have health constraints, fat is flavor. Also, brown butter and generous comfort food portions for the win. Lastly #season with your heart.
