Slits made into marinated chicken breasts, stuffed with bacon and cheese baked till perfection.
HASSELBACK CHICKEN - (Serves - 4)
Ingredients
4 boneless chicken breasts
Salt to taste
Crushed black peppercorns to taste
1 teaspoon chopped mixed fresh herbs
1 teaspoon Worcestershire sauce
15-20 baby spinach leaves, shredded
3-4 bacon strips, cut into 1 inch pieces
20-30 grams mozzarella cheese, cut into 1 inch thin pieces
Method
1. Make incisions on each chicken breast and transfer in a bowl. Add salt, crushed peppercorns, mixed herbs and Worcestershire sauce and mix well.
2. Place each marinated chicken on a baking tray. Put some baby spinach leaves, bacon pieces and cheese pieces in between the incisions.
3. Put the baking tray in preheated oven and bake for 8-10 minutes.
4. Serve hot.
