SIMPLICITY EP. 15 Begun Bhaja

(Pan-fried eggplants)

Fried veggies (simply called 'Bhaja') e.g. Eggplants, Potatoes, Pumpkins, etc. are a crucial part of Bengali cuisine. This is how we make Begun Bhaja.

Deets:
----------
Eggplant, cut length-wise (keep a little bit of the stems on)
Salt
Turmeric
Mustard oil for frying

- Marinate the eggplants with salt and turmeric for 5-7 mins.
- Heat ¼ cup of mustard oil until smoking hot.
- Add the eggplants and fry on medium heat on each side until golden brown.
- Serve hot with rice and dal or, with roti/poori/paratha.
