Shrimp / Prawn Crackers Recipe

This is a snack for my lunar new year dinner. Perfect for the guest to eat on while waiting for dinner. Even though it is called cracker (炸虾片), it is more like shrimp-flavored chips - extremely crispy and hard to resist. I haven't met anybody that doesn't like them LOL!

Ingredients
150 peeled and deveined shrimp
1 tbsp of minced garlic
1/2 tbsp of minced ginger
30 g crushed ice
Instructions
Add the shrimp into a food processor along with all the seasoning and the crushed ice. Blend until smooth. If you don’t eat shrimp, you can change it to fish, or squid.
Add the tapioca flour in batches and blend until a non-stick dough formed. Other types of starch such as mung bean starch, potato starch, cornstarch will also work but tapioca is the best because it contains a higher percentage of amylopectin, which makes your shrimp crackers puff up bigger. Also, different brand and types of starch have a different water absorption rate, the measurement that I gave is for reference. You should adjust the water amount depending on your situation.
Roll the dough into a long, even, smooth log then cut the log into 2 manageable pieces.
Add the shrimp dough into boiling water. Stir gently until the dough floats. Then simmer on the lowest heat for 30 minutes.
Transfer the dough onto a rack and chill in the fridge uncovered for 30 hours.
Slice the dough into 1 mm thick pieces. Do not cut it too thick, otherwise, the crackers will be chewy and tough.
Place all the slices on a rack and fully dehydrate them by using one the following methods.
1)Use a dehydrator ( 4-5 hours at 120 F)
2)Put it in the oven and set the temperature at the lowest possible (3 hours at 150F).
3)Put it under the ceiling fan overnight.
Store the dehydrated crackers in a sealed container for up to 6 months.

Years ago when we first moved to California, we went to a Vietnamese restaurant. My very first and way different than they are now. They had a lemon beef salad with a sweet dressing, and shrimp crackers on the side. You used the crackers to scoop up the salad. I thought it was divine!

I've since wanted to copy it. And that was from the 80s! I will tuck this little recipe away for my experiments. Thank you for sharing!

This is the BEST Chinese cooking channel on YouTube...hands down. The way you take the time to explain each and every step, and the science behind what you are doing is just amazing. Not to mention, that when you give the Chinese names for things you pronounce them clearly and slowly for us English speakers. Too many Asian cooking channels don't give the proper names in a manner that we can actually hear as primary English speakers. It's extremely helpful to know what they are called and the proper pronunciation so that when we go to the Asian markets to get these ingredients....we can actually relay to the workers there what we are looking for. You're so thoughtful with all of the information you provide for us, and I absolutely love watching your videos for this reason. Keep it up...you are awesome!

Thank-You so much for this ☺️ I love shrimp crackers. I saw this recipe once on Liziqi's channel and became curious cause they looked really good. I ended up ordering a bag online to try them and fell in love 😁 Liziqi's video was in chinese so I tried finding other videos to show how they're made...but no other video gave measurements or cooking times or real direction so I've been buying them on-line (they're a bit expensive) I'm glad to finally see a video that teaches me how to make my own. You find the most delicious foods in China, Korea, and Japan ☺️❤️

This is awesome! My family has made shrimp cracker 'chips' (called Krupuk...sounds like kroo-pook) for special occasions but have always bought them at the asian store. I had no idea that I could make them from scratch. It's a lot of work but looks like it is totally worth the effort. I don't know how many times I've made these from store-bought and they just taste a little old/stale. Thanks for this great recipe!

My Indonesian-Dutch grandmother would make krupuk regularly. She would limit us to 5-6 crackers each! Now I always serve them when I make lumpia with rice and peanut sauce. I've always wondered how they were made...can't wait to try this recipe.

I have a friend whose been making these for ages. I'm amazed at how good of a job he does knowing know the care and technique that goes into them. Now my appreciation is on a deeper level than taste. Excellent video, I really enjoyed it.
