Steak Tartare

Would you eat raw meat? Normally I wouldn't but when it comes to a few dishes like beef carpaccio and steak tartare I will make an exception. This is such an incredible dish and it's so simple to make.
Compound Butter
- 50g butter
- 10g garlic
- 5g parsley
Method
1. Allow the butter to come to room temp and then mince and add the garlic. Chop the parsley fine and add it as well.
2. Mix well and then it's ready to use. Store in the fridge for 2 weeks easily.
Tartare
- 150g Beef Filet
- 2 Tsp Red Onion
- 1 Tsp Chives
- 1 Tsp Parsley
- 1 Tsp Cornichons
- 1/2 Tsp Capers
- 1 Anchovy
Dressing
- 1 Tsp Mustard
- 1 Tbsp Olive oil
- 1/2 Tsp Worcestershire sauce
- 1/2 Tsp Sriracha or any hot sauce of choice
- 1 Tsp Lemon juice
- Salt & Pepper to taste
Method
1. Mix all the ingredients for the dressing in a large bowl
2. Chop all the ingredients for the tartare
3. Add them tartare ingredients into the dressing and mix well
4. Serve with bread that's been toasted with the garlic butter
5. Add an egg yolk on top to serve.
