Trader Joe's Vegan Spicy Mexican Cheese is exactly what I was looking for when I put together this recipe!

Ingredients:
6 medium Poblano or Corranza peppers
1/2 cup diced onion
Small minced garlic clove
Small tomato seeded and diced
12 oz package impossible burger
1 TBSP EVOO
Dab of vegan butter or more evoo
1 tsp each of oregano, cumin and salt
1/4 cup minced cilantro (for mixture)
1/2 cup TJ’s dairy free shreds, I used Trader Joe's spicy Mexican style
More cilantro for garnish
Another cup of cheese divided between the peppers

Directions
Cross cut the peppers and get the seeds out.
Sauté onion, garlic and tomato.
Let mixture cool.
Add mixture to Impossible beef, along with spices, cilantro and cheese.
Mix and stuff into peppers
Grease bottom of small casserole dish and add peppers.
Cover with foil and bake covered for one hour at 400 degrees.
Remove foil, add more cheese and broil until bubbly

Note: you may have to tip off some of the juices before you broil
