I haven't gotten it on my Pixel Watch 3 LTE yet, but I've installed the update on my Pixel Tablet & Pixel 9 Pro XL and the things I'm looking forward to most, so far, are:
- syncing of dismissing notifications across Pixel devices
- tap to Cast (though sadly I don't think it applies to Google Home devices or other cast-enabled devices other than phones & tablets)

Since you asked, my phone & watch are on Google Fi & I'm located in California.

*UPDATE*
I'm not sure if it's new but I don't recall seeing it on my Pixel Tablet when running Android 14:
- the ability to save app groups when you use them split-screen, which then adds it as an icon on your home screen

I know other manufacturers have the feature but I haven't seen it on Pixel devices until Android 15 so, if new, I'm liking that too.

the temp sensor is now actually usable, having the a camera sight + updating the temps all the time without pressing the "rescan" button. That should have been since the start. still, its more or less a "gimmick" but imo a neat feature to have when needed

Pixel 9 pro, carrier KPN, The Netherlands, had to force a search but phone found the update, and installed Android 15, on October 15, 23:00 GMT. Thanks for taking the effort to post your vide, even when travelling!
