This is our tribute to 328 Katong Laksa, one of Singapore’s most famous laksa stalls. It’s known for it’s rich, flavourful, coconut-based curry soup. Do you think Jon did it well?

With Peranakan influence, this laksa represents a unique blend of Chinese and Malay culinary traditions; including the types of spices and noodles used.

In this video, we’ll show you how to prepare the signature creamy broth, the essential toppings, and how to enjoy the dish —using only a spoon!

Ingredients:
Rempah:
200g Dried Chilli paste
30g Galangal
2 tsp Turmeric
7 Candlenut
3 tbsp Toasted Belacan
300g Shallots
5 stalk Lemongrass
80g Dried shrimp, rehydrated
1 tbsp Ground coriander

3 tbsp Cooking oil
500g Prawns
1.5 litres Waterl
200ml Dried shrimp soaking liquid
100ml Cooking oil
5 stalk Laksa leaves
1-1.5 litres Coconut milk
1 tbsp Sugar
1 tsp Salt

Per portion:
150g Thick bee hoon (cut)
5 slices Fish cake (cut into short strips)
Prawns

Garnish:
Dried laksa leaves
Sambal belacan

1:05 add a bit of water and/or oil next time, blenders don't do well with dry ingredients

Actually, the one thing I hate about katong laksa is the cut up noodles lol. But everything else about it is great.
