OH MY! I just made this today and really was skeptical since all other keto banana recipes i've tried weren't great. THIS is GREAT! I could not believe it until I ate it. Wow, you really nailed the taste. It taste better than the real banana bread I used to make. It's moist and the consistency is right on. Love, love, love this recipe. Thank you! I just made this, Carolyn, and although one of my pet peeves is people (like I’m doing right now) who message you before they eat whatever they’ve made, I just wanted to say that while I was wondering why I had to let the bread cool so long (not having paid very close attention to what you said), I decided to just roll the darn bread out of the pan. It popped right out—beautiful! I’m guessing from my little tastes of the batter after I mixed it that it is going to be awesome. Told my husband that I think you are a genius….

Finally made this... it was on my every growing list of your recipes I want to make. I couldn't find banana extract anywhere so I just used vanilla and I used vanilla whey powder. With Lily's chocolate chips it turned out like a chocolate chip cookie bread :). Made some keto raspberry jelly, added some peanut butter and it was a perfect breakfast. Delicious! Thank you.

Hello there! I tried this recipe today and I must say, the chia seeds really do give it that wonderful banana-like texture. I decided to use emulsion instead of extract, and I added 3 teaspoons of it. The result was absolutely delicious! Thank you so much for sharing this recipe with us.

This banana bread is knock your socks off good!!! Full disclosure, I used about 1/2 cup ground flaxseed to substitute for the chia seeds because I cannot eat them. All other ingredients and methods were exactly as written. So so good. I never imagined I could have something that had the taste and texture so authentically "banana bread" THANK YOU!!!!

This is really very close to a real banana bread, the texture is just spot on! The taste is also great but the banana flavour wasnt strong enough for me because I used an essence instead of an extract which is unavailable in my country. I also overbaked it a tad. I'm definitely going to give this recipe another shot using extract and watching the temp. Thanks for sharing this amazing recipe!
