Kewpi mayo and less fish sauce goes hard. This is a great sauce.

If theres egg in it, its not an aioli, aioli uses raw garllic as an emulsifier, its just garlic and oil, mayonnaise is a different thing entirely.

It's not an aoili. mayo and aoili are completely different. Mayo is egg based, and aoili is made from straight olive oil and garlic, no egg.

Is there a reason you added the granulated garlic near the end? From my experience, adding it near the beginning helps the grains get enough time to absorb moisture and 'bloom' to allow the flavor to permeat more of the sauce. Im an amateur when it comes to food and cooking in general, so i could be wrong, but id love to hear your thoughts on it!

It’s not actually aioli if it uses mayo. That’s just mayo. Aioli is just garlic and oil no eggs.

Try ordering your stone crabs, and their mustard sauce, from Joe’s Stone Crab on South Beach, Fl. They are the town’s oldest continually operating restaurant. Either the #1 or #2 volume restaurants in the country at one time.

Wow. You can make your own mayo but i wil def use that chili sauce. Some food is better more fishy some is better less. I agree. Crab needs less fishy and more crab.

Holy fish sauce batman! For that amount of dipping sauce, I'd probably only add two drops personally

Stone crab is great on its own, dony ruin it with sauce . Melted butter if it's hot .

wow, indonesian condiment, never knew would find it in this channel haha, anyway bro, just use the sambal for the dip without the mayo. It's good anyway but we indonesian doesn't traditionally eat mayo😅 great video and pronounciation of that oelek (the "oe" pronounced like u in uber, the "lek" is spot on)

I gotta ask.. does a stone crab claw NEED a sauce? Too each their own, but I would rather stick to simple butter
