I hate peeling Garlic, so I like the peeled garlic cloves you can get almost everywhere. But in the supers they cost a fortune and at Costco they're dirt cheap. But how do you keep a giant 3-lb bag fresh? Here's how.

Just freeze it. If you want and have a vacuum sealer you can break the bag up into several sealed bags.
I just roll the top down of the 3lb bag to get air out and use a binder clip.
When I want some garlic I quickly take it out of the freezer and just chop and use it quickly.
Thawed, the garlic will be slightly mushy but cooks and chops up perfectly.
I have kept garlic in the freezer for months and it still tasted fine.

Sure, you could, but this will pretty dramatically alter the flavor and texture of the cloves. But it's pretty easy to do a side-by-side experiment and report back on the differences in the methods after a few days, weeks, etc.

Just freeze them and pull out what you need. They thaw fast and smash easily when frozen.

vinegar kills all the good stuff garlic is good for. Just lacto-ferment them....salt only, or perhaps some whey. Lasts longer, stays "live" and even healthier.

I'll do a taste test in the near future with fresh whole cloves to my frozen ones and report back.

Simpler solution.
Roll 3lb bag top down to remove excess air.
Place a binder clip on rolled portion to keep closed.
Place in Freezer and keep it there.
Take out as needed and replace bag quickly into freezer.
The garlic is usable in anything.

Why not just freeze the garlic? Put it is small freezer bags and pop in the freezer. Pull out a small bag and there ya go.
