As a native English speaker, although it’s not grammatically correct, ‘yeah’ or ‘sure’ are common casual ways of responding. These may also be followed by the phrase ‘no worries’ which can also mean ‘I don’t mind’.
As others have pointed out, when we say ‘yeah’ or ‘sure’ we’re responding to the request to take the photo and it’s therefore implied that we don’t mind.
There is also a subtle and implied difference between ‘yes’ and ‘yeah’. Yes is more formal and implies that you do mind. Yeah is casual and answers the request to take the photo not the ‘do you mind’.
‘Do you mind’ is used to increase politeness but isn’t the actual question.

Politeness is always rewarded when dealing with civilised people, regardless of their level of education or financial status. The owner of one of the classy bars in my neighbourhood would not abide rudeness.
One of his favourite habits was to politely reply to a rude customer and, at the same time, ignore that person.
For example the customer sits down at the bar and calls out, " Vodka rocks."
Mac would shout back, "It really does, but Cognac is classical."
Then he would leave the person hanging until a polite order was placed.
Regulars often explained the old man's idiosyncrasies to the newcomer.

Quick tip: in the US we don’t say photo in this situation, we’d say “take a picture”

His answer's INCORRECT. You don't say yes or sure when someone asks you "would you mind"/"do you mind"!!!

For those confused- in this scenario ‘do you mind’ is a polite and informal way of saying ‘would you be ok with’. So she asking would they be ok with taking a photo of her and they reply ‘Yeah’. Also don’t use ‘Yes’! In this case ‘Yes’ and ‘Yeah’ have two different implied meanings. Yes is too formal for the casual tone of the question, so it sounds like you do mind taking the photo. Yeah or Sure, are more casual and are responding to the request to take the photo.

As for me, I don't like to take photos with someone's phone. Same I don't like giving my phone to someone especially strangers.
