I think it simbolizes a near death experience for him. Something to show that he wasn't just playing around on that island but was fighting for his life to stay alive and get stronger. It could also simbolize his goals. The first scar he got from Mihawk on his chest could simbolize his goal to become the greatest swordsman. While the scar on his eye could simbolise his desire to get stronger to protect his friends.

Actually, during Zoro’s timeskip training, he got lost and ended up in the Naruto/Boruto verse, and took a Rinnegan from Nagato, that’s why Obito only had recovered 1 Rinnegan, and Zoro put it in his left eye socket because he slept so hard it fell out of his socket when he woke up, and is closing an eye to keep it a secret, and the scar is from him telling Mihawk to slice it to one make him look cooler, and two do people don’t ask him why his eye is closed
