It's best to put the tube 90% of the way into the gun first before snipping the end, then use the nozzel assembly to push it in the last 10%. It's much easier and avoids the possibility of any squeeze-out.

How do you stop the sausage from getting stuck inside by the plunger? For some reason it happens to me a lot.
