fattoush salad recipe ↓⠀
• 1 pita bread ⠀
• 1 large tomato, chopped ⠀
• ½ cucumber, chopped⠀
• handful of radishes, sliced⠀
• 1 clove of garlic, minced⠀
• 150g romaine or iceberg lettuce ⠀
• 3 tablespoons olive oil (plus more for drizzling)⠀
• 3 tablespoons lemon juice ⠀
• 1 teaspoon pomegranate molasses
• 1 teaspoon fresh mint, finely chopped⠀
• 1 tablespoon fresh flat parsley, finely chopped ⠀
• sumac ⠀
• salt ⠀
• pepper⠀
1. preheat oven to 200°C ⠀
2. cut pita bread into bite sized pieces, drizzle with olive oil and season with salt and pepper ⠀
3. put on baking paper on a baking sheet and cook for about 10-15 minutes or until golden (depending on size of pieces), flipping halfway ⠀
4. mix lettuce, tomato, cucumber, radishes, parsley and pita ⠀
5. mix olive oil, lemon juice, garlic, sumac, mint and pomegranate molasses, pour over salad, mix and top with more sumac
