I HAVE TRIED THIS WAY ALL THE TIME AND THEY TURN OUT CRISPY ALL THE TIME. I DIDNT LEAVE MINE IN THE FRIDGE OVER NIGHT. IT CAN BE DONE RIGHT AFTER YOU SEASON THEM AND THEY WILL TURN OUT THE SAME.

Everytime I make chicken wings I always open up youtube and look for this video and make my wings this way and there awsome and the kids love em. Been doing it this way for 2 years. keep up the good work man.

Not exactly an academic source, but a few articles on Serious Eats suggest that baking powder's gas releasing reaction forms small bubbles of protein on the surface that add surface area that can quickly dehydrate (a prerequisite for crispiness) and solidify. It's also a pretty common ingredient in things like batter for fried chicken, where I imagine the expanding bubbles do a similar thing—allow easier removal of water from the batter by increasing the surface area so it can crisp up.

The pH change may also help break down the skin, if applied in advance.

I have now made these wings twice.  The first time I took the skin off to save myself from the extra fat and the wings came out perfect!  The second time I made them, the person I made them for told me to leave the skin on because they liked the crispy fat.  When I did this, the wings honestly did not stay crispy as long.  We had them for the "Big Game" Sunday and by the end of the game, my crispy wings were not-so-crispy.  I think I'm going to stick with taking the skin off of the wings!

My sauce came out great both times.  I used the butter as suggested with the Red Hot Buffalo sauce - yum!  My base seasoning for the wings was Mrs. Dash's spicy seasoning (no-salt.)

I use the same method, instead i only use a light dusting of salt and pepper for the seasoning because the sauce will add most of the flavor i desire.  Also, instead of the butter/hot sauce mixture, i use Billy Rays Buffalo wing sauce and everyone loves my wings!

I bake mine at 400 for at least 45 minutes (until the fat from under the skin is completely rendered). Then I pull the wings out of the oven, set the broiler to high, let them cool slightly and brush the skin side with a high smoke point oil (peanut, grape seed). Put them under the broiler but leave the oven door open so as not to continue baking and keep an eye on the skin cause it will crisp FAST. But this will get the skin VERY crispy! :)

So I've tried a few different method of using baking powder. I Pat them dry with paper towel then put them in the fridge for a couple hours. Seems to work great.
