Near the end Rambley goes on a bit about his registration trademark and ends it by saying it expired yesterday. Registration trademarks last for 10 years, when you link with the fact it's been around 8 years since the park shutdown. That means it was open for about 2 years.

I predict that the arcade minigames are gonna be an analogy of how the park fell apart. Whoever Salem is suppose to represent sabotaged the franchise by turning the mascot hostiles. We can see blood on Molly's beak, Finley's neck and Lloyd's paws, implying at least each of them killed someone (Bit via beak, crushed via coiling, and mauled via claws respectively).
As for what the mascots really are, we don't got a lot to work with. Only the fact Molly got flesh and blood underneath the costume. Either they're all humans turned psychotic pretending to be these characters, or they're some kind of real life anthropomorphic animal experiments that went wild one day. They're not animatronics that's for sure.

I appreciate how uniquegeese kept parts of his remake of garten of ban ban in this. Molly’s stalking and attack scenes as well as her peering around corners in the slides. I love how he added that into this game. I really like this so far and can’t wait to see more. :)
