how do you determine the number in the eq()? how do you know if "eq" is needed at all?

Would you know how to specify a negative selector. I would like to gt the field value and discard the field Label.
For example: <b>Field Title: </b> Field Value
The selector should be something like "div > :not(b)", but this did not work neither the regex
