I am from Philippines and i remember my mom would always use pork with some fats on them., i think they are part of the meat that is made for bacon, anyway my mom always use lots of smash garlic and never remove the skins, she just leave them on smash cloves ..delicious and i lost my mom last year and i am living here in Canada so when is see someone make it online it brings me back home...but i always make them with sliced pork chops here... and thank you for using ribs on your version... it solved my problem of serving ribs now i can have ribs and adobo all in one...thank you😋😋😋😋🙏🙏🙏🙏 and sribs are very lean and fat free too

Yes, Philippine Adobo is one of my favourite dishes, as well. It is very versatile; one can adobo-ize anything! Fish, chicken, pork, stewing beef, ox tail, et cetera. Masarap na ulam!

I had planned on doing ribs tomorrow anyway, will do this, but try them on the Smoker for a different flavor dimension on them !
