Chicken Parm Sliders | Delish

Betcha can't eat just one!
DIRECTIONS
1. Preheat oven to 350°.
2. Season both sides of chicken with salt and pepper. Place in a large ziploc bag, pour flour in and shake until the chicken is evenly coated. Whisk together two eggs in a large shallow bowl. Dip chicken in the eggs. Toss in breadcrumbs for the final dredge.
3. In a large skillet over medium-high heat, add enough olive oil to coat the bottom of the skillet and heat until the oil is shimmering. Add chicken and cook until golden-brown and cooked through, about 6-8 minutes per side. Transfer to a cutting board and cut into small bite-size pieces, about 1/2” cubes.
4. In a medium dish, lay the bottom halves of the slider buns. Top with a thin layer of marinara, cooked chicken, mozzarella and Parmesan. Top with remaining slider bun halves.
5. In a small bowl, whisk together butter, garlic powder and parsley. Brush butter mixture on top of buns and bake for 15 minutes, until the cheese is melted and the sliders are warmed through.

1 1/2 lb. boneless, skinless chicken cutlets
1 c. flour
2 eggs
1 c. italian breadcrumbs
2 c. marinara
Extra virgin olive oil

2 c. shredded mozzarella
1/2 c. freshly grated Parmesan
1/4 c. butter, melted
1/2 tsp. garlic powder
1 tbsp. chopped parsley
