In this video I'm going to show you how to make galatopita - a Greek pie made with a milk-based semolina custard.
Galatopita is an "irresistible' Greek dessert - it's creamy, dreamy and just delicious!
The recipe consists of three parts:
First, we prepare the custard by combining the semolina, corn flour, eggs, lemon zest and vanilla in a large bowl.
Next up, heat the milk along with the sugar. It's important not to boil the milk and make it scalding hot. (Keep it at a low simmer).
Slowly add one ladle of the warmed milk to the semolina mixture and whisk until well combined. This step needs to be repeated two more times. We then add the tempered mixture back to the milk and cook until the custard thickens. Add the butter, stir again and pour into a prepared baking dish.
Finally, we'll prepare the topping for the galatopita. Combine the egg, sugar and milk in a ramekin and whisk well. Pour over the galatopita and brush, ensuring it covers the whole pie.
We'll bake the pie for 45-50 mins. Once cooked, it is essential to allow it to cool completely (approx. 4 hours) before serving.
Serve the galatopita with sprinkled ground cinnamon and powdered sugar.
