Spicy Lemongrass Pork Belly Noodles

Here's my cooking video for this delicious and easy noodle dish! I think of it as Thai/Vietnamese fusion noodle.
Serves 2-3
Ingredients:
1 pack of fresh flat rice noodles 24 oz. (I used Vietnamese banh cuon noodles)
1/3 lb pork belly thinly sliced
2 tbsp sliced or minced lemongrass
1 white onion sliced
5 green onions cut into 2" length
6 Chinese broccoli tips cut into 2” length
1 tbsp minced garlic
2 tbsp cooking oil
Thai chilies cut into small pieces. Add according to your spice level preference
Sauce:
1 tbsp dark soy sauce
3 tbsp soy sauce
1 tbsp sesame oil
1 tbsp sugar
Instructions:
1. Microwave the noodles for 2-3 minutes with a wet paper towel on top. Let it cool then separate the noodles. If you can't find these fresh flat wide rice noodles you can buy the dry ones. But these fresh ones are the best!
2. Slice pork belly into thin pieces.
3. Chop white onions, green onions, Chinese broccoli, mince the garlic and cut the Thai chilies into small pieces if you decide on making it spicy. You can omit the chili or add more/less to your preference.
4. If you are using fresh lemongrass, thinly slice 2 tbsp of the stalk. I use pre sliced frozen lemongrass so it's really easy!
5. Mix together all sauce ingredients in a bowl.
6. In a wok heat up cooking oil and sauté the lemongrass, garlic, Thai chilies and white onion until the onion starts to soften.
7.Add in pork belly and cook until pork is thoroughly cooked.
8. Add in Chinese broccoli and stir for few minutes until it’s cooked.
9. Add in noodles and pour in sauce.
10. Mix well then lastly add in the green onions and cook for 1 last minute.
