Thank you for sharing your method of making milk tea! I can't wait to try it :) I've tried making milk tea at home in the past and it was no where close to the desired taste I wished to achieve. I must get myself a percolator!

Albert, thanks for the good demonstration. Made my first pot of tea today it seems like the real thing. I used 8 T of decaf Ceylon (thank your wife for giving me permission to use decaf), and 2 T of Assam, just for the heck of it. One problem I had: I had to learn how to use a percolator again! I first tried just making 2 cups of tea. Then I read the instruction manual. (Ironic that I had to read an owners manual for a percolator but not for my iPhone!) See second comment....

Hong Kong milk tea originates from British colonial rule over Hong Kong, thus it's like a Hong Kong's take on the Brit's afternoon tea. I just read from Wiki that some recipes do mix in chinese pu-lei tea, but in general it is
a British influenced tea culture so the tea used are more "British".

Will give it a try, thanks for the tip! Basically anything alkaline should work as long as it doesn't actually impart a taste. So that's the secret to sweet tea huh?

Actually, have you tried using a pinch of baking soda rather than egg shell? That's the secret ingredient to southern sweet tea to cut out the bitterness and it's easier to use.

You have to use a minimum of 4 cups of water. (I have the same percolator as yours.) Just FYI for others. Question: Where do you get Burmese tea? Not even google turns up "Burmese tea" nor does Amazon have it. (I got my tea from Adagio.) Thanks for the good videos.

I bought my Burmese tea from Taiwan; it's illegal to import Burmese products into USA as far as I know. I hope your tea tastes great!

My wife buys the decaf from amazon. My Burmese tea is from Taiwan. Burmese products ASICT are not allowed into USA.

you should add Lipton yellow label to make it more in aroma and reddish color

Thank you for the informative video! Would using the already heated water from a water boiler suffice (I currently use a Zojirushi water boiler for all my tea needs) or would I have to adjust the amount of time the tea percolates/steeps? Any help would be greatly appreciated!

Can you elaborate on just what the heck alkaline water is? Is that a water softener on your house system or is it something you can buy in a jug at the supermarket? Also, I've heard from my wife, who is Chinese, that they also use cuttlebone which is the white fish bone that birds sharpen their beaks on to cut the bitterness. Not sure where you are located, but New Hollywood cafe on Pacific in San Francisco makes a pretty mean cup. If you've tried, how does your recipe compare?
