i worked at a Brazilian Steakhouse as a teen and these are actually pretty good once you get over the fact it's heart.

Yes, it's totally normal to eat chicken hearts and liver medium to medium rare, 3 of us ate all of these, and believe it or not we are still alive and were absolutely fine. If you overcook them they taste pretty intense and are also really chewy.

Don't let the secret out bro, they're cheap because people don't know how amazing they are and are weird about organ meat. Chicken hearts and livers were my main protein in college: lean, nutritious, cheap, and FUCKING DELICIOUS

I'm from the south of Brazil, we eat it there at almost every BBQ (churrasco).
They are already supper fat, so I don't add any oils. Also, no need to marinate for a long time. My typical seasoning is lemon juice, mashed garlic, rosemary, salt and black pepper. Sometimes I go for white wine instead of lemon and/or oregano instead of rosemarin.
One extra tip, save the "juice" thar is left after you skewer them, and use it to brush them when grilling, pack them with extra flavor.

We cooked chicken halves for the volunteer fire dept, taverns, Super Bowl, church events . Many thousands through the 1970’s and 1980’s . We would cook hearts gizzards necks and livers in Cornell BBQ sauce in a big pot. Salty tart vinegar type with the fats from necks .
Those were always sought after but were the cooks treats. They went fast even with a big box full of them in the kettle.
The chicken halves always sold out and all the cooks and hang arounds got the “guts” haha
No meat thermometers back then you twist the drumstick in the thigh if it spins in the joint freely the bird is done . Place them in big kettle and mop drench with Cornell sauce cover and let set and steam that juice through them. Mouthwatering tender.
Uncut Cider Vinegar is the Key. That tang from it makes your mouth water and mixed into chicken fat it’s delectable.
Salt Potatoes and side dish of baked beans usually accompanied.

Unbelievably underrated! I have these on my grill at least four to five times every year. They make a fantastic Ragout as well!

It just makes me happy that so many different cultures and countries fully utilize the entire animal. Here in the US, we just eat chicken sandwiches, burgers, steaks, brats, etc. But other cultures eat intestines, the blood, liver, etc. I think it's amazing that those parts of the animal didn't go to waste, as all creatures are precious. I have so much respect for those who cook in such a way

Offal is very beneficial for people and pets (I feed em to my dogs).

Normally when I'm boiling the chicken, I simmer the organs/offal separately and feed it to my two dogs as a treat, but one bird had come with literally the organs of three birds–sometimes the birds come with nothing–so I decided to cook half for myself by lightly dredging them in panko with salt and pepper, and I sauteed them in a pan with some of my favorite fancy butter, oh, and some onions fried along with, and it was a delicious little snack! Oh, the livers, I prepped it like foie gras 👌🏻 it's not the same as the authentic foie gras I had at my first French restaurant, but it was still very tasty, especially on a cracker.

I never understood why so many Americans get squeamish about the idea of eating a heart or liver or stomach lining/ internals from animals in general... Like the KOTH episode where Bobby got the gout, and the doctor was saying the condition could result from overconsumption of super-rich organ meats like liver and whatever else he said, and Hank is like:

THE BOY'S NOT A GHOUL! 😂

They're not bad, they're pretty common in Asian dish which I grew up with. But I dont recall eating them on its own, they're usually mixed in on the chicken meats on a smaller ratio with more chickens and few small cuts of hearts

I absolutely LOVE chicken hearts!!! My friends will forever make fun of me, but I don't care lol. I fry 'em up real quick, and pop em in my mouth like li'l meat grapes🤤🤤. If you cook them more than medium, put em in the fridge and eat them the next day. They'll soften up- don't ask me for he science lol. I definitely gotta try this marinade though; turn my fave snack into a meal 😍😍

Fun fact, they are extremely popular AND cheap here in Brazil, because we don't export chicken hearts so their prices are lower compared to other parts where our internal market has to compete with exports.

It's one of the things I love about having turkey at Christmas. They give you the heart in the giblets and its really nice. Hearts I. General are nice, lamb hearts are cheap and taste exactly like that expensive leg of lamb you'd have otherwise bought, it's just a bit tougher since it's a hard working muscle.
