It’s ironic coming from Joe talking about narcissism.. Joe isn’t even a real chef.. he didn’t go to culinary school or had any proper training.. he’s just someone who eats and talks a lot and being an Italian.

That judge didn't get hugged enough as a child.. people need to learn how to speak professionally without emotionally getting invested..
Dislike or criticize the food all you want, but there are consequences to being disrespectful like that boy judge.

People are missing the point he's making. These judges are looking for chefs that execute the basic concepts of a dish. It's about basic fundamentals not creativity. Most restaurants that are built on creativity don't last because gimmicks only go so far. Take any pizza restaurant that's been open for more than 30 years. Those restaurants don't stay open and are successful because they are constantly making something new. They typically have a great baseline product and if you can't execute that properly people might show up once for the gimmick but then never come back. So when the judge says make a pasta they expect it to look and taste like the dish it's meant to be.

Being a cook is about doing the same thing, the same way, over and over again until it’s time to clean everything top to bottom and go drink beer and smoke cigarettes until the wee hours.

Ok so chalenge was to replicate the plate 1 to 1 or to use some basic (or not so basic) knowledge and techiques and made classic dish?
