Green harvest at Tenuta Sette Ponti

Before the grape starts veraions we realize the green harvest.
Some grapes are selected and removed to optimize the remaining grapes depending on leaf wall and plant’s balance.
This work needs particular care and attention. The goal of this thinning is to have polyphenols (colour, aromas and tannins) which then will confer class and elegance to wines.
